Just to share with you my happy news. On the 13th of September my boyfriend Phill Shanhun proposed and I accepted. We will be married on the 5th of May 2007, it is all very exciting!

Just to let you know I am still alive and well, and there's still a lot going on in my life. I'll report more on my other blog... ok, well I do need to update that one too...

Christine's Chocolate Slice

The most delicious - chocolate fudge with cream cheese topping and it looks very spectacular with the patterned top.

Chocolate Base

185g butter

1/4 cup cocoa

1 cup sugar

2 eggs

1 cup plain flour

Method - Base

Melt to butter and cocoa together. Add sugar. Whisk in egg. Fold in flour.

Pour into greased lamington tins.

Cream Cheese Topping

250g cream cheese

1/3 cup sugar, extra

1 teaspoon Vanilla essence

1 egg, extra

Method - Topping

Beat cheese, extra sugar and vanilla together. Add extra egg.

pour over chocolate mixture. Swirl through with knife.

Bake in moderate oven 180°C for 40 minutes.

Cool in tin, cut when cold.

I had an busy time in Canberra, learning lots at the conference and visiting various government agencies to see how they do records management. I got to do an extra afternoon sightseeing, as my flight via Melbourne was delayed because of the Queen, Commonwealth Games traffic etc., I got a direct flight 6 hours later with seat 1A in business class for my trouble. But oh my goodness I was fairly exhausted when I got into Perth at about 9:30ish!! I'd been up since 5:30am as I was bussing it back from Wagga Wagga. Then I managed to sleep 12hrs on Monday night/morning but was still a bit tired on Wednesday when I got back to work lol. Travel sure takes it out of you, but I'm back to normal now. :) Just in time for my hair trial for Ky's wedding. Which by the way turn out really well! :D

I'm back in Perth after a very adventurous trip to Canberra and Wagga Wagga, I'll post more about that soon. Just wanted to let you all know I'm back in one piece :D Back to work tomorrow. :)

Yes that is correct I'm going to Canberra for a conference next week and on the weekend I'm visiting rellies in Wagga... can't wait :D
